Syfany Winery
Vrbice, Czech Republic (Moravia)
The name is an homage to Jakub Zborovsky's parents: Sylva and Fana, who started the family farm in Vrbice in 1989, back when Jakub was still very young. The Zborovský family has been in this village — in the Modré Hory, the "Blue Mountains" of southern Moravia's red wine heartland — for some five hundred years, which is about how long Jakub claims there's been wine in the house. Jakub took over the vines from his father, expanded the plantings, and turned Syfany into one of the most exciting wine names in the Czech Republic. It's still a working farm, too: carrots and cereals grow alongside the grapes.
Jakub's definition of terroir fits in twenty square kilometers: grapes from Vrbice, a cooper from neighboring Čejkovice, barrel wood from the Ždánický les forest down the road. The vines grow organically on calcareous clay and marl; in the cellar, everything ferments spontaneously and moves by gravity, resting around ten months on the lees in local acacia barrels — no fining, no filtering, minimal intervention.
The wines are alive, energetic, and even a little mischievous — skin-contact blends, pét-nats, and reds with names like The Beast and Push-Up. Five centuries of roots, and Jake is just getting started.
